‘Self-Care’ Sunday ~ 2/5/2017

A new month, a new chance to take good care of ‘you’!

Happy February everyone! Yes, I am one of those people who LOVE Valentine’s day! It’s the colors, the roses, the chocolate…oh yes...the chocolate! I’ve tried many gourmet chocolatiers, and like it or not, my most favorite in the world is See’s Candies.

Since I was a little girl, that small red box full of Bordeauxs, Mayfairs, and Butterscotch chews, was the hallmark of the month of February. I really can’t imagine Valentine’s Day without them.

So of course, my mind turned to ‘chocolate’ this week. Since I was making a trip across town to my mother’s house, I figured I would whip up a batch of the BEST brownies I’ve ever had. This recipe I share with you has absolutely NO redeeming nutritional value…I don’t care. Sometimes self-care means bending the rules a little…or a lot…this recipe accomplishes that in spades.

Pound & 1/2 Dark Chocolate Brownies

  • ~11/2 pounds semi or bittersweet chopped chocolate

  • ~2 sticks butter

  • ~6 eggs

  • ~2 cups sugar

  • ~ 1 TABLESPOON vanilla

  • ~11/2 cups flour

  • ~1 tsp baking powder

  • ~pecans or walnuts for sprinkling on top

Melt chocolate and butter in pan, set aside.  Mix separately the eggs, sugar, and vanilla.  Stir chocolate mix into egg mix.  Combine dry ing and add to choc/egg mix.  Pour into greased 9×13 in pan and sprinkle chopped pecans over.  Bake at 350 degrees for 35-40 min. {I turn oven off at this point and let brownies sit for an additional 20 min to set in middle. You may or may not need this additional oven time, a toothpick in the center will determine ‘doneness’}

    Nice to see the treat recipe. I agree, we spend a lot of time making our own food to keep the tummy happy and sometimes a treat is in store and not feel guilty about it.
