Looking for an alternative to that boring fruit platter to bring to this weekend’s BBQ?
You’re trying to eat healthy, trying to lose weight, and you’ve been asked to bring a dessert to the party.
Don’t be that guy.
You who I’m talking about: the person who grabs the ‘ready-made’, tasteless, cut ‘weeks ago’ fruit platter to toss unceremoniously on the dessert table as they head for the beer cooler…why, this may even be you. *Gasp*
Well, I’ve got an alternative for you that will have you the person forever hailed as, “That guy who brought the AWESOME watermelon cake last summer!” …
This thing is ridiculously simple, and seriously inexpensive to make.
First, a few words on the health benefits of watermelon.
I always thought that considering watermelon is made up of 92% water, it was minimal in its nutritional value…oh how wrong I was:
Watermelon Health Benefits
Valuable source of Vit A & Vit C
Excellent source of Lypocene ~ an antioxidant that helps to prevent hardening of the arteries, and prevents many types of cancer
Contains Cucurbitacin E, a plant compound that prevents inflammation
Helps to improve digestion
Promotes beautiful skin & hair (collagen/protein/beta-carotene)
Fresh Watermelon Cake
Peeled watermelon trimmed into ‘cake’ shape
2 Cups heavy whipping cream
2 TBSP extra fine sugar (or run regular sugar through a processor for 45 seconds)
Strawberries/blackberries/slivered almonds for garnish
Whip cream and sugar to stiff peaks and ‘frost’ watermelon. Garnish with berries, and press almonds gently up the sides.
