Summer is rolling in fast! Are you prepared for a season of healthy summertime eating?
I’ve made my peace.
As you all know, the months of Oct/Nov/Dec is the time of year I live for.
I dwell in the desert. And….’summer’. Enough said.
However, over time I have found myself acclimating in several ways.
Not only has my blood thinned over the years making the warmer temps far more tolerable than the cold, but one day I realized that if I just stopped complaining, and looked at all there is to be thankful for…well…I guess summer’s not so bad.
What Good Is There To Find About The Summers In Phoenix?:
Well, I’m blessed with A/C. Seriously, this was the BIG one that kicked my butt out of the ‘bitching & moaning’ mode. I enjoy the luxury of relaxing in deliciously cooled rooms all season long. There are many, many poor souls out there who have not been blessed with what I have…what in the world am I complaining about?!
The Fourth of July! My anniversary! Going to the library with the kids (or by myself *wink*)! BBQing outdoors instead of running the oven! Flip-flops, ect.
AND…there’s an abundance of summer eating to be enjoyed!
So, this brings me to my point.
My awesome sister-in-law turned me on to a little ‘group thing’ called Swip Swap on Facebook.
Basically, it’s a Craigslist but with your neighbors ‘kind of deal’.
Seriously, I may never buy anything new at full price again!
These people are selling some good stuff for great prices!
So last night I bought a brand new Cuisinart Ice Cream Maker from a newly married couple (an unwanted wedding gift) for only $20 (he was asking $30 but,….SCORE!).
WHEN YOUR ‘LOW BALL’ OFFER GETS ACCEPTED:
One may think the last thing one needs when trying to eat healthy is an ice cream maker…’One’ would be wrong.

There are all sorts of frozen yogurt, sorbet, and vegan (made with coconut milk instead of heavy cream) to be found there.
From basic fruit recipes to avocado/honey and Stevia sweetened frozen treats, you can find and/or modify so many recipes to suit your health needs!
Here is the first recipe I made…it was the BOMB! Tweak it any way you would like. I am sharing with you the way I made it, but you can go for lower fat yogurt,/sweeten with Stevia/or substitute milk for coconut milk. Just remember, when you substitute for lower fat options you change richness and consistency. (FYI: This makes a delicious/nutritious breakfast option as well!)
Peanut Butter Frozen Yogurt w/Granola
2 C Vanilla Yogurt
1/2 C milk
1/2 C peanut butter
1 1/2 tsp vanilla extract
1/3 C sugar
Mix all except granola. Follow instructions on machine. Sprinkle granola over top when ready to serve.
