An Autumn Adventure ~ Recipe For Delicious ‘Apple Blossoms’

I’m off on an adventure!  And guess what? You’re coming with me!  So here’s the deal:  we begin on the morning of October 31, where we will be traveling (by way of that most dread and archaic method; ‘the car trip’) to So Cal for the wedding of my husband’s niece which will take place the next afternoon.  Then back to Arizona that night (cause we all gotta work in the morning).

Now, lest you think it’s “relaxin'” time, think again.  We will now begin baking 2 dozen cupcakes a day for the next 7 days for my son’s wedding, which will be held on November 21.  After those 7 days are up, we will bake 3 layers of cake that will comprise the ‘cutting cake’.  Got it? Feeling all energized and spunky?  What was that?  Did you just say, “Are we there yet?”……….que video:

NO!  We’re just gettin’ started!

Now, start preparing for the company that will be arriving on November 13.  Hey now, don’t forget about the husband’s 50th birthday on the 17th!  What shall we do now?  Oh yeah!  We need to be preparing the frosting for said 150 cupcakes + the 3 tiered cutting cake starting Monday, frost and fill cake with raspberry fill/choc ganache/and cream cheese frosting on Thursday, fill and frost all 150 cupcakes on Friday, prepare all baked goods for transportation to venue, say a multitude of sweat stained/tear filled prayers that all baked goods arrive intact, pick up food from caterer’s for rehearsal dinner, attend rehearsal dinner, set up cake and cupcakes at venue, attend son’s wedding,………slowly slip into a dark, viscous pool of ‘crazy’………………..’kay, now it’s Monday the 23, and time to prepare the house for the church Thanksgiving we’re hosting in the backyard~

Recipe for Autumn Apple Blossoms fibromyalgia treat
~Recipe Of The Week~
~Autumn Apple Blossoms~
~1 box puff pastry
~1 lemon
~4 green and red tart apples
~1/2 cup dark brown sugar (you can use white, but…why would you do that?)
~1 tbsp. cinnamon
~1 egg (whisked)
OPTIONAL: Syrup for brushing on blossoms~
1/4 cup apple jelly, melted over stove top
1 tbs Calvados apple flavored brandy
Core and slice apples thinly.  Boil about 2 cups water, turn off heat, add juice of lemon and apple slices.  Cover for 5 min. and drain.  Cut pasty lengthwise into 1-2 inch strips brush with egg, and sprinkle cinnamon and sugar over.  Down the length of each strip, layer apple slices overlapping each slice as you go down.  Roll entire strip like creating a fat spiral, and place each one into a greased muffin tin opening.  Bake at 400 degrees for 15-20 min.  If desired, combine jelly and brandy.  Brush over hot blossoms when they come out of the oven.

    I will be thinking of you. So hard. This is a huge amount of work for SuperWoman to do, let alone a human with an Auto-Immune disease. You rock! It sounds like an incredibly busy time, but one full of family and full of love. Are you going to go into hibernation when it’s all over? Bury yourself under the covers for days? I hope so!!!
